+ CREAM CHEESE FILLED SNICKERDOODLES

I saw this recipe a while back and knew I had to try it...but, I decided to use this recipe and then the cream cheese recipe from the first recipe to fill them.  Not sure why i didn't just follow the first recipe through. 

My suggestion, use this recipe in it's entirety because they probably come out a lot smaller than this recipe.   Are you confused yet?  Me too.

Anyway, this is what I did!

Ingredients
1 cup butter
1 1/2 cups sugar
2 large eggs
2 3/4 cups flour
2 teaspoons cream of tartar
2 teaspoons vanilla {my addition}
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon

Cream Cheese Filling (prep this before you start the cookie process): 
8 oz cream cheese {I only needed a very small portion of the 8 oz when I went to fill the cookies}
1/4 cup sugar
2 teaspoons vanilla

Mix these ingredients together and then put the cream cheese back in the fridge.

Directions
  1. Preheat oven to 350°F.
  2. Mix butter, vanilla, 1 1/2 cups sugar and eggs thoroughly in a large bowl.
  3. Combine flour, cream of tartar, baking soda and salt in a separate bowl.
  4. Blend dry ingredients into butter mixture.
  5. Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
  6. Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
  7. Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
  8. Coat by gently rolling balls of dough in the sugar mixture.
  9. Flatten the dough with the bottom of a sugared glass  
  10. Scoop a teaspoon of cream cheese in between two pieces of flattened dough, then pinch together
  11. Place on chilled ungreased cookie sheet, and bake 10 minutes.
  12. Remove from pan immediately.

Mine came out a bit flat- I might have pressed the cookies too much with the glass, but it didn't bother me.  Also, hear that these are best to be refrigerated if won't be consumed in one day.
